Know before you buy
The bolsterless design is a signature of MAC knives, intended to reduce the overall weight of the blade and allow you to sharpen the entire length of the edge. It also encourages a more natural pinch grip, which provides better control and comfort during extended prep sessions.
The extra half-inch provides a slightly longer cutting surface, which is particularly useful for slicing larger vegetables or proteins in a single motion. Despite the added length, the knife remains exceptionally lightweight and agile, making it feel less cumbersome than many other 8.5-inch blades.
The blade is crafted from high-carbon Chrome Molybdenum Vanadium steel, which offers a balance of edge retention and stain resistance. While it is more resistant to rust than traditional carbon steel, you should still hand wash and dry the knife immediately after use to maintain its finish.
The steel used in the HB-85 is designed to be relatively easy to sharpen compared to harder, more brittle alloys. With regular honing and occasional sharpening on a whetstone, you can maintain its precision edge for years.
The blade is tapered from the spine all the way to the edge, creating a thinner profile that encounters less resistance as it passes through food. This geometry allows for smoother, cleaner cuts and prevents the blade from wedging into denser ingredients.
