The JU65 is a Nakiri, or Japanese vegetable knife, specifically engineered for slicing, dicing, and julienning produce. Its flat profile is optimized for a forward thrust cutting motion rather than the rocking motion used with a traditional chef's knife.
The textured band near the edge of the blade creates small air pockets that prevent produce from sticking to the side of the knife. This allows for smoother, faster chopping without having to constantly clear slices away from the blade.
While it excels at vegetable preparation, the thin, sharp blade is also excellent for slicing boneless proteins or herbs. However, it should not be used for cutting through bone, frozen foods, or hard pits, as the thin edge is prone to chipping.
