Unlike traditional aerobic composting that requires oxygen and frequent turning, Bokashi uses an anaerobic fermentation process. By adding the included bran, you break down food scraps in an airtight environment, which is faster and significantly less prone to odors.
You can compost almost all food scraps, including meat, dairy, cooked food, and even pet waste. This makes it more versatile than standard backyard compost piles, which typically exclude animal products.
The spigot allows you to drain 'leachate,' a nutrient-rich liquid byproduct of the fermentation process. You should drain this liquid every few days to prevent buildup; it can be diluted with water and used as a potent fertilizer for your houseplants or garden.
The two-bin system allows for a continuous cycle. While one bin is full and undergoing the fermentation process, you can begin filling the second bin with fresh scraps, ensuring you never have to stop composting while waiting for the first batch to finish.
When the lid is sealed properly, the system produces very little odor. You might notice a slightly tangy, pickled scent when you open the bin to add scraps, but it should not smell like rotting garbage.
