Know before you buy
Yes, the Gokujo is specifically designed as a dual-purpose tool. Its narrow, curved blade is flexible enough to fillet delicate fish while remaining sturdy enough to navigate around bones when trimming meat.
The D-shaped handle is ergonomically designed to fit securely in the palm, providing a comfortable, non-slip grip that reduces hand fatigue during repetitive tasks like deboning or skinning.
This knife is not dishwasher safe. To protect the Damascus finish and the razor-sharp edge, hand wash it with mild soap, dry it immediately with a soft cloth, and store it in a knife block or on a magnetic strip.
VG-MAX is a high-performance stainless steel known for its exceptional edge retention and hardness. It allows the blade to be honed to a very fine 16-degree angle, ensuring it stays sharper for longer than standard kitchen knives.
Because of the 16-degree double-bevel edge, it is recommended to use a whetstone or a Shun-approved sharpener to maintain the blade's precision. Avoid using pull-through sharpeners, as they can damage the delicate Damascus cladding.
Shun offers a limited lifetime warranty that covers defects in materials and craftsmanship. It does not cover damage caused by misuse, such as cutting frozen foods or bones, or normal wear and tear.
