The Swedish steel used in the UX10 offers the impressive hardness and edge retention of high-carbon steel but with the added benefit of being highly stain-resistant. You get the professional-grade sharpness without the constant worry of rust or patina development.
The UX10 is designed for precision tasks like slicing, mincing, and chopping vegetables or boneless proteins. Because the blade is thin and hardened to 59 HRC, it should not be used to cut through bone or frozen foods, as this could chip the edge.
To maintain the 59 HRC edge, we recommend using a high-quality whetstone for sharpening. Avoid using pull-through sharpeners or honing rods that are too aggressive, as they can damage the specific geometry of the blade.
The composite wood handle is durable and moisture-resistant, making it much lower maintenance than traditional natural wood. Simply hand wash the knife and dry it immediately after use to keep the handle and blade in peak condition.
